January 24th is National Peanut Butter day and in honor of this glorious holiday I decided to bake a batch of Peanut Butter and Chocolate Chip Cookies. This recipe is slightly modified version of Cake by Courtney's version of her "Irresistible Peanut Butter Chip Cookies." What I really liked about these is how soft & chewy they are in comparison to other Peanut Butter cookies I have seen all over Instagram & Pinterest.
The secret to making these cookies "irresistible" is to not let them fully cook. This will make your cookies come out softer & chewier than other PB cookies. They did come out a little under-cooked but that's what made them all the more amazing.
