Classic White Cupcake


Being a baker has always been something I aspired to be while I growing up. I nagged my parents for over five years to get me a Kitchenaid Stand Mixer and Christmas 2018 was finally that year!

I knew my first creation could not be anything too difficult in order to avoid the feeling of not being good enough, so I chose to go with a classic (and easy) white cake with a white chocolate buttercream frosting. I was inspired by @bakingwithblondie's White Chocolate Orange Cupcakes with White Chocolate Orange Buttercream. Having an extremely picky family, I chose to leave out the whole "orange and cranberry" part of the cake and make something a little simpler.

Baking the cupcakes was by far the easy part since I have screwed up buttercream numerous times. Getting it to be the perfect consistency, color, and flavor is way harder than it looks. First of all, the recipe calls for 5-7 cups of powdered sugar (you can imagine how sweet this thing was)!! Having diabetes run in the family, I chose to only use four and a half cups of powdered sugar and I still managed to get a decent consistency. So a word of advice: make sure to taste your buttercream before you keep adding more sugar to it!

Having it been my first time making cupcakes and buttercream completely scratch, I was very proud of the overall result. Stay tuned for some more successful (or failed) attempts at becoming a self-taught baker. :)
